I'm setting up a ubr7223 using 1.1. I want to use a 2.0 modem that is backwards compatible, just in case we go to a 2.0 capable cmts in the future. I'm going to try using Docsis_Server first.

Are all modems created equal? Will all brands work with Docsis_server? Are there any brands that should be avoided? Will they all do NAT?

All DOCSIS 2.0 modems should be able to operate in 1.1/1.0 mode.
DOCSIS modems generally don't do NAT, they are bridges. Though, there are lots of models available which are actually modem+router in one device,and usually have wireless too.
You are safe to go with whoever of the top vendors you choose - Cisco (the former SA), Motorola or Arris.
