Do you mean monitor the amount of traffic used - graphs & such? Use cacti - it's an rrd/mrtg poller that's fairly easy to get going. If you're talking about live packet capture, that's probably better done on an upstream router (where you can mirror an interface). There's CALEA wiretapping abilities but I haven't a clue how to configure them on a 10k....

use mrtg or cacti to graph the traffic going through cable modem's ethernet port

(these tools run an snmpget against the cable modem ip, and grab the modem's ethernet port traffic counters)

To see the intstant throughput on a modem you can do "show cable modem qos"

To track historical traffic usage another option (other than mrtg/cacti) would be to run netflow or ipdr traffic counting on the cmts, exporting to a database, and then draw graphs based on eg 15 min usage intervals
